Roasted Cinnamon Almonds

Ingredients

  • 1 lb Almonds
  • 1 Egg White
  • 1 tsp Vanilla
  • ½ C Sugar
  • ½ C Brown Sugar
  • 1 Heaping Tbsp Cinnamon

Instructions

  1. Preheat smoker/oven to 250 degrees F.
  2. Whisk egg white until frothy
  3. Add vanilla
  4. Coat almonds in egg white and vanilla mixture
  5. Combine sugar, brown sugar and cinnamon in bowl
  6. Add sugar mixture to almonds and coat well
  7. Put almonds on pan with parchment and spread
  8. Roast almonds for 70-90 minutes stirring every 10 minutes until almonds are dry
  9. Remove, let cool 5 minutes and enjoy
