Cedar Bay Salmon Tacos with Fresh Mango Guacamole

Ingredients

  • 1 Cedar Bay Salmon Filet
  • 2 Avocados
  • 1 Mango
  • ¼ C Red Onion Finely diced
  • ¼ C Cilantro Chopped
  • 1 Lime
  • ¼ C Queso Fresco
  • 1 Tbsp Kosher Salt
  • Crema for finishing touch
  • Tortillas

Instructions

  1. Preheat oven or grill to 425 degrees F.
  2. Place salmon and cedar plank in grill and cook for 12-15 minutes or until internal temperature reads 158 degrees F.
  3. While salmon is cooking combine the following for the Fresh Mango Guacamole:
  4. Avocados (I left them in fairly large cubes)
  5. Mango (cube same size as avocados)
  6. Diced onion
  7. 1-2 tsp kosher salt (to taset)
  8. ½ Lime squeezed
  9. Once Salmon has reached its target internal temperature of 158 degrees F, remove it from the grill and assemble your tacos in this order:
  10. Salmon, Mango Guacamole, Queso Fresco, Cilantro and Crema with an extra dash of salt and a lime as garnish.
