Herb Butter Smoked Prime Rib: Your GO TO Prime Rib Recipe

Ingredients

  • Prime Rib 8-10 lbs.
  • 16 oz unsalted butter
  • 8-10 cloves fresh garlic minced
  • 2 sprigs fresh thyme minced
  • 1 sprig fresh rosemary minced
  • 2-3 tsp kosher salt
  • 2 tsp fresh ground black pepper

Instructions

  1. Preheat smoker to 225 degrees F.
  2. Trim bones at bottom or roast 1 inch back and clean bones
  3. Soften butter in bowl and combine herbs and spices
  4. Cover roast with butter mixture
  5. Place on cooling rack inside cooking sheet covered with parchment paper
  6. Cook to desired temperature (see chart above)
  7. Let rest 15-25 minutes
  8. Sear on grill until crust formed
  9. Let rest
  10. Slice and Enjoy

RARE (125 degrees F)- 33-35 minutes per pound
MEDIUM RARE (130-135 degrees F)- 35-38 minutes per pound
MEDIUM (140 degrees F)- 38-42 minutes per pound
