Rustic Peach Galette

Ingredients

  • Filling-
  • 4-5 fresh peaches skin on
  • ¼ C Sugar
  • 1 ½ Tbsp Corn Starch
  • Crust-
  • 4 C Flour
  • 1 1/3 C Shortening
  • 1 Tbsp Sugar
  • 2 tsp Salt
  • 1 Tbsp White Vinegar
  • 1 egg + water to make ½ C
  • 1 extra egg

Instructions

  1. Preheat oven or smoker to 400 degrees F
  2. Wash and slice your peaches thinly and set aside on a cookie sheet. Combine the crust ingredients in a mixing bowl. Crust should be dry enough that they aren’t sticky but wet enough that they’ll roll out.
  3. Roll out crust to a medium thickness on flour dusted parchment paper (about ¼” or slightly thicker)
  4. Place peaches on in any pattern you like leaving about 2-3 inches outside of the peaches (this becomes your crust)
  5. Sprinkle Sugar and Starch on peaches
  6. Fold edges up onto peaches (this is easier if you lift the parchment paper and help the dough)
  7. Mix egg and apply egg wash to the dough.
  8. Place in 400 degree F oven for 35-45 minutes or until your crust is golden brown and delicious.
  9. Remove and let cool on a cooling rack for 10-15 minutes.
  10. Serve warm with vanilla ice cream or enjoy cool (if it lasts that long).

Recipe Notes

A Peach Galette is similar to a peach pie but is not baked in a dish and has no top. It’s a very forgiving dessert in that you don’t have to worry about having the perfect lattice crust or carved details. So follow the recipe below and be ready to see how easy and different each one will be.
